Lotus’ head chef Chris Yan had earned a name for himself in the industry working at Billy Kwong and China Doll before presenting his own modern take on Chinese cuisine with the first Lotus restaurant in Walsh Bay and now, The Galeries. Chris’ fervour for food is inspired by his grandmother’s home cooking, adapting her authentic Chinese recipes using inspiration from other cuisines to create his own simple but inventive dishes.
